Ingredients: 1 lb cream cheese; 2 oz pitted medjool dates, cut into eighths; 2 oz pecans, coarsely chopped; 2 tbsp shredded unsweetened coconut; 2 tbsp honey; pinch of salt

Ingredients

1 lb cream cheese

2 oz pitted medjool dates, cut into eighths

2 oz pecans, coarsely chopped

2 tbsp shredded unsweetened coconut

2 tbsp honey

pinch of salt

Directions

Cut chunks of cream cheese into a food processor and add all the other ingredients. Pulse briefly, then scrape down and repeat 6 or 7 times until everything is incorporated but still a little chunky. This is the closest thing to ice cream that you can spread on a bagel. It's great, but easily outlasted my sweet tooth - I was starting to think about thinning it out with a little cream and using it to frost a carrot cake.
